Acorn House Restaurant trains restaurant workers in the art of hippy
Opening 14 November, Acorn House Restaurant is not just a new green eatery: it's also geared to train ten new restaurant trade workers every year in how to work a green commercial kitchen. All waste recycled; water purified onsite (instead of shipped in bottles); green power running lights; sustainable produce - never air freighted; customers asked to donate 50p to tree planting to offset the carbon generated by their trip to dinner. Located at at 69 Swinton Street, London WC1X, the kitchen is overseen by Executive Chef Arthur Potts Dawson, former head chef of Fifteen and the River Café. [GT]
