Helis Holistics suggests that the best way to ensure that your flour is truly organic is to grind it yourself. To that end, they sell a number of grain mills such as this snazzy Salzburger Cara with a corund-ceramic millstone and insulation between the motor and the mill chamber which prevents the flour from heating up thereby preserving all the important heat sensitive vitamins and minerals. The mill is 35 cm X16.5 cm and produces approx. 100 g per min of fine flour. No word if like the wheels of justice, the mill grinds slow but grinds exceedingly fine.
