If you think salt's not that important, first remember the fairy tale of the princess who valued her father as importantly as the salt that flavoured her food, and second remember that the human body is 42% salt. (Well, maybe it just feels that way after a few days of this 92% humidity and 30+ degree weather.) Also, the Anglesey Sea Salt Company has a salt called smoked Halen Mon which was short listed for the 2006 NASFT award for Outstanding Savoury Condiment, Pasta Sauce, Salsa, Cooking Enhancer or Spice.
